Port Royal Ginger Peach

I recently got the opportunity to work for the Captain. Captain Morgan. Now it wasn’t so much looting, pillaging or sailing (although it was technically on a boat…sorta). I was tasked by the Captain himself to create three cocktails for a party at Cleopatra’s Barge Bar inside Caesars Palace (see, technically a boat). We are going to make the first of the three, the Port Royal Ginger Peach. This is a very straightforward, simple cocktail to make that combines the vanilla notes of Captain Morgan Spiced Rum, the sweet fruit flavor of the Peach Schnapps, a tart touch of fresh lemon and a spicy kick from the Ginger Beer. This is also a fun party cocktail since it can be easily pre batched and all you need to do is top it off with the ginger beer and peaches then give it a stir. Ready to make one?

1)  Lets get our tools together; we will need our Citrus Press, our Bar Spoon, a 14-16 oz Collins glass, a jigger with a 1 oz and a .5 oz measure. Optionally you can utilize a double strainer to catch the pulp and seeds from the citrus juice. Our shopping list will include Captain Morgan Spiced Rum, Peach Schnapps, Ginger Beer, Grenadine, Lemons, Oranges or 100% Orange Juice and Peaches.

2) First we have some quick prep to take care of, our peach garnish. Simply cut some slices and dice the rest of the peach. Set the rest aside for later. If you’re not using them right away hold them in a small cup or dish with some water and a splash of lemon juice. Done.

3) Lets begin adding our .5 oz of lemon juice into our chilled, iced up, 14-16 oz Collins glass. Simply slice your lemon in half and with our citrus press squeeze it into your jigger. Preferably however you would want to squeeze the lemons and then run it through our double-strainer and have the juice set aside and ready to use.

4) Next up we are going to add our 2 oz of fresh orange juice. I would recommend fresh juice for this cocktail but if pressed for time or if you plan on making a bunch of these cocktails for a party go with something like Naked Juice or Simply Orange 100% orange juice. If you’re gonna squeeze your own juice, follow the same steps for the lemons. You may need to cut the oranges to fit your citrus press however or use a juicer.

5) Now let’s add the 1 oz of Peach Schnapps. I would recommend Briottet Creme de Peche or Bols Peach. The Briotett can be a bit difficult to find but try specialty liquor stores (if they don’t have it on the shelves they should be able to order it for you) or online. Dekuyper Peachtree will work in a pinch and should be readily available.

6) Lets add the star of the show, 1.5 oz Captain Morgan Spiced Rum. I wanted to utilize the vanilla notes in the rum and combine that with peach and ginger.

7) Time to add our 2-3 oz of Ginger Beer then give a light stir. For this I would strongly recommend Fever Tree Ginger Beer. Lots of spicy ginger flavor. If you want to make a stronger cocktail with a little less ginger punch, use Crabbies Ginger Beer. Crabbies is an alcoholic ginger beer so it will still give your cocktail some ginger flavor plus a little extra kick.

8) For the finishing touches lets add a bar spoon full of grenadine right on top and let it trickle down. Top it off with a peach slice and some peach chunks. Enjoy!

Port Royal Ginger Peach- 1.5 oz Captain Morgan Spiced Rum, 1 oz Peach Schnapps, .5 oz Lemon Juice, 2 oz Orange Juice, 2-3 oz Ginger Beer, stir lightly, bar spoon of Grenadine, garnished with a peach slice and some diced peach chunks.
