Cherry Tomato Cocktail

The Cherry Tomato cocktail is my entry in this year’s Absolut Best Bloody Mary Contest. I chose to utilize the color, the sweetness and the vegetal character of the yellow cherry tomato to try and create an original take on the Bloody Mary. The best Bloody Marys always have citrus, spice, salt, and savory. Knowing this I tried to find different ways to introduce those elements to the cocktail and still stay true to the basic formula of a Bloody Mary. The citrus element is found in the Absolut Citron and punched up with a little fresh lemon, the savory can be found in the Fee Bros Celery Bitters, the spice is coming from the Siracha and we get a triple whammy with our honey syrup infusion of sea salt, celery and pepper. Ready to make fun take on a cocktail classic? Lets make a Cherry Tomato Cocktail!

1) Lets get our tools together; we will need our Boston Shaker, our Hawthorne Strainer, our Double-Strainer, our Citrus Press, an 8-10 oz Cocktail (martini) Glass and a Jigger with a 1 oz and a .5 oz measure. Our shopping list will include Absolut Citron, Fee Bros Celery Bitters, Siracha, Yellow Cherry Tomatoes, Lemons, Honey, Celery, Black Pepper, and Sea Salt. We will also need some Red Cherry Tomatoes as a garnish too. For our prep we will need a cutting board, paring knife, and a juicer or a large fine mesh strainer and a muddler. Optional tool will be a spice grinder or manual pepper grinder.

2) Lets get the prep out of the way-

Yellow Cherry Tomato Water– If you’re using the juicer it’s as easy as throwing them in and making cherry tomato magic. Be sure to run the juice through a double-strainer or fine mesh strainer to catch all the pulp, seeds and any skins. Remember we are not making puree. The second method will yield less juice and is a bit more taxing however there is less pulp and seeds to get sorted out. Begin by slicing the cherry tomatoes in half. Next set your fine mesh strainer over a bowl or large measuring cup to collect the juice. Now put the tomatoes on top of the strainer and muddle the tomatoes to extract the water. Discard the skins and pulp and repeat until you get the desired volume of yellow cherry tomato water.

Black Pepper, Sea Salt and Celery infused Honey Syrup– Lets begin by cutting up “1 bunch” of celery and boiling it down in 3 cups of water. Set aside the leafy celery hearts for the garnish. Allow to cool and strain out the celery. We now have our celery water needed for the infusion. In a saucepan add 1.5 cups of our celery water and combine with honey, 1 tablespoon of sea salt and 2 tablespoons of black pepper (optionally but preferred try to use fresh ground black pepper). Bring mixture to a boil and reduce on low for 8-10 minutes. Allow to cool then strain syrup through a double-strainer or a fine mesh strainer to remove any pepper.

3) Lets get our Mixing glass out and add our .5 oz Black Pepper, Sea Salt and Celery infused Honey Syrup.

4) Next up we can add our .5 oz of fresh lemon juice. You can slice the lemon and press the lemon with our citrus press right into the jigger or do it beforehand and run it through a double-strainer to catch any pulp and seeds.

5) Now we will add our 8 dashes or Siracha. Feel free to add more or less depending on your spice preference. 8 dashes is a good start right in the middle.

6) Grab the Yellow Cherry Tomato Water and add 2 oz into our mixing glass.

7) Lets add 4 dashes of Fee Bros Celery Bitters. Be sure to use Fee Bros for this recipe due to its savory flavor notes. Bitter Truth makes an incredible celery bitters as well however it carries a bright, crisp, fresh, vegetal celery flavor. For this recipe we will need the savory notes found in Brother Fee’s version 🙂

8) Now we will ad the back bone of the cocktail, 1.5 oz of Absolut Citron. Absolut Citron contains no added sugar and includes a little lime to go with the natural lemon flavor to get a bright citrus pop.

9) Add ice to our mixing glass and shake! Double-Strain into our chilled Cocktail Glass and garnish with three red cherry tomatoes and a leafy celery stalk.

Cherry Tomato Cocktail– 1.5 oz Absolut Citron, .5 oz Black Pepper, Sea Salt and Celery infused Honey Syrup, .5 oz fresh Lemon Juice, 2 oz of Yellow Cherry Tomato Water, 4 dashes of Fee Bros Celery Bitters, and 8 dashes of Siracha, add ice, shake, then Double-Strain into chilled Cocktail Glass and garnish with three Red Cherry Tomatoes and a leafy Celery Stalk.
